Description

The neck is located on the shoulder of the beef, just below the nape. It is a very lean part and is considered the best and most tender cut, with a thin layer of collagen inside, which makes it particularly soft. It makes a wonderful braised dish, lemon-flavored, wine-braised, stew, or oven-baked with pasta (giouvetsi).
